Nothing like a light dinner when you have had a long day at work, feeling drained and dang it’s bloody warm out. (that is not a complaint by the way)!

One thing I love to do is always have fresh veggies in the refrigerator, especially for days like this.

Key is trying to balance all food groups to ensure I am getting what is required. Hummus is a great source of protein so added that into the veggie mix instead of a dressing or yogurt based dressing. (yes you will see old white cheddar cheese on the plate, I was craving cheese so I had some).

Side Plates used and set for each person are an added touch.

As you can see nothing wrong with a light dinner. I personally prefer to have a lighter dinner and usually later into the evening giving myself a bit of time to unwind from that day.

And my hips were moving and swinging to The Electric Swing Collection. A great energetic beat that just makes you smile and makes those hips slide.

Let’s face it, I love pie! Unfortunately, my waist does not. It’s a love hate relationship.

Rhubarb will make anyone person pucker

The other day, while walking home after work, I noticed one of the grocers had rhubarb for sale. Strike that, I wouldn’t call it a sale (Dios Mio that is not a sale price for something we treated as a weed growing up). It cost me $6.99 per pound!!

Well, it didn’t deter me because as soon as I saw it the thought of my aunt Linga’s Rhubarb and Strawberry pie started filling my head. I could almost taste it. Oh she can cook! Writing this, I am thrown back to a couple of my favourite dishes she would make. A rice dish was one of them amongst many (maybe she will upload it to the site for you all to be able to make it) and her Cherry Cheesecake. To die for!

**My waist just said, type faster I’m not burning enough calories thinking about those dishes!**

While walking home I got thinking, I would love this as an oatmeal but how am I going to get the rhubarb the right texture for oatmeal as it takes some time in the oven to cook? Answer – let’s make stewed rhubarb. That’s what we call it back home. Some may call it a Rhubarb Chutney. I call it, “heaven in a bowl!”

So that evening after taking a nibble of it, “oh la la that stuff is sour”, Into a pot it went with some spices and then of course no I couldn’t wait. I actually had oatmeal for dinner.

Pad Thai in Tamarind Sauce


A college and friend who has influenced my cooking!

Back in 2010 a colleague of mine returned from vacationing in Jamaica with her family. When she return to our office she brought me a gift that was Tamarind!

A jar of preserved Tamarind Sauce , heck I had not heard of this before.


That jar of tamarind sauce opened my palette/challenged my mind (my sister is reading this, rolling her eyes saying, “challenged your mind? What mind!) to how do I cook with this!

After some trial and error(s) I have fallen head over heels for tamarind.

From stir-fry, banana & tamarind ice-cream, deserts, marinades, baked beans and since 2010, always in my pad thai.
